The Pisco Sour is of Peruvian origin and has a huge and diverse history that starts with conquest of Spain in the 16th Century and their introduction of grapevines to Peru and Chile. The term Pisco refers to a strong alcohol made from fermented grapes.
The ‘sours’ part refers to the egg white and lemon that is added; this was developed by bartender Victor Vaughen Morris, who moved to Peru in 1904 and developed the cocktail in Lima around 1915. The drink has remained popular in Luxury hotels in Peru since the 1930s and has since reached global circulation.
