The Tom Collins is a Collins cocktail made from gin, lemon juice, sugar, and carbonated water. First memorialized in writing in 1876 by Jerry Thomas, “the father of American mixology”. It gave name to the famous Collins (hiball) glass and can often be found as a ready-made ‘Collins mix’.
The Tom Collins holds a firm position as one of the worlds most well-known cocktails, it has a varied history that is well embedded in nineteenth and twentieth century American culture – nowadays it has many different recipes and variants.
